Instructions

Neapolitan Crust Dough

  2. Add all the “00” flour at once and mix thoroughly with a large wooden spoon or, preferably, a Danish dough whisk until just combined. You may need to use wet hands to incorporate any remaining dry flour. No kneading is required or advisable for this dough.

  3. Cover the container with a non-airtight lid (such as a lid that rests loosely on top or plastic wrap with a corner left open). Allow the dough to rise at room temperature for approximately 2 hours, or until the top begins to flatten. Do not punch down the dough! It’s important to retain as much gas as possible within the dough for optimal texture.

  4. After rising, refrigerate the dough. It can be stored and used over the next 14 days, developing more complex, sourdough-like flavors over time. Once refrigerated, the dough will collapse and will not rise again in the container; this is perfectly normal.

  5. For easier handling, especially for the first use, refrigerate the dough overnight or for at least 3 hours before shaping.

One Small Margherita Pizza

  1. Place your pizza stone on a rack in the bottom third of your oven. Preheat the oven to 500°F (260°C) and allow the stone to preheat for a full 30 minutes.

  2. Prepare your pizza peel to prevent sticking. You can sprinkle it with flour or cornmeal, or simply lay a piece of parchment paper on it.

  3. Sprinkle the surface of the refrigerated dough with flour. Pull up and cut off a piece of dough weighing about 8 ounces (the size of a small orange). A serrated knife or kitchen shears can be helpful.

  4. Lightly flour your hands. Gently stretch the surface of the dough around the bottom, rotating it as you go, to form a taut ball. Work quickly, aiming to complete this in 20 to 30 seconds, to avoid overworking the dough.

  5. Flatten the dough ball with your hands, then use a rolling pin directly on your prepared pizza peel. Roll it out into an approximately 1/8-inch-thick round, about 12 inches across. If the dough resists, let it rest for 5 minutes to relax before continuing. An imperfectly round shape adds to the rustic charm!

  6. Spread your chosen tomato sauce over the dough, leaving about a half-inch border. Then, add the fresh basil (if using now) and evenly distribute the chunks of fresh mozzarella. Drizzle a little olive oil over the pizza, if desired. As you add toppings, gently shake the peel to ensure the pizza isn’t sticking. If using flour/cornmeal, it should move freely; if not, use a dough scraper and more flour to free it.

  7. If using parchment paper as a base, you don’t need to worry about sticking. You will transfer the pizza directly onto the preheated stone with the paper.

  8. Carefully place the tip of the pizza peel near the back of the hot stone. Give the peel a few quick forward-and-back jiggles, then sharply pull it out from under the pizza. If using parchment paper, this transfer will be very easy. For maximum crispiness, you can carefully remove the parchment paper after about 4 minutes of baking by gently lifting the pizza with your peel and sliding the paper out.

  9. Bake for 8 to 10 minutes, or until the crust is golden and the cheese is bubbly and slightly browned. Use a spatula to help slide the baked pizza back onto the peel. Allow the pizza to cool slightly, preferably on a wire rack, to allow the cheese to set properly. Enjoy your delicious homemade masterpiece!
