Ingredients

  • 1 large red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 1/2 cup red wine vinegar
  • 1/4 cup granulated sugar
  • 1 teaspoon kosher salt
  • 1/8 teaspoon ground allspice

Instructions

  1. Trim, halve and peel the onion. Place the cut side down and slice into half moons about 1/8″ thick. A mandoline may be used for very thin slices.

  2. In a medium saucepan, whisk together the vinegars, sugar and salt. Heat over medium-high until it comes to a boil, whisking until sugar and salt dissolve. Remove from heat and stir in allspice and red pepper flakes.
